Eryngium Maritimum - Sea Holly

Eryngium Maritimum

Not a plant I have tried, but I was struck by its beauty. The main edible part is the root, but young leaves can also be eaten. But it's a rare and beautiful plant and it is illegal to dig it up in Britain.
